Corzetti are thin, round disc like pieces of pasta that originate from the north west of Italy. The thin discs are cut from a sheet of pasta and stamped with a design to leave an embossed image. These are then cooked and dressed with sauce.
Directions:
- Roll out your sheet of fresh pasta.
- Using a cookie cutter with a diameter of 5cm, cut out circles.
- Place each disc of pasta between the patterned surfaces of the corzetti stamp and push down firmly.
- Remove the imprinted corzetti pasta from the mould and it is now ready for cooking.
These charming patterns and designs have been conceived and produced in Sardinia, where each mould is painstakingly hand finished to ensure crisp outlines for the perfect imprint on your pasta. Each mould is treated with a food grade oil to ensure durability and to bring out the brilliance of the wood.
